Amplified Taco Bowl

Ingredients:

1 lbs ground meat (beef, pork, turkey, bison, or lamb)

1-14oz canned black beans, drained and rinsed

1-14 oz canned pinto beans, drained and rinsed

2-4 Tbsp Taco Seasoning (see recipe below)

salt and pepper to taste

2 T avocado oil

4-6 c chopped kale

4-6 Sweet Potatoes, baked and diced

4-6 slices pineapple

guacamole or avocado

Taco Seasoning Recipe

  • 1 tablespoon chili powder

  • 1/4 teaspoon garlic powder

  • 1/4 teaspoon onion powder

  • 1/4 teaspoon crushed red pepper flakes

  • 1/4 teaspoon dried oregano

  • 1/2 teaspoon paprika

  • 1 1/2 teaspoons ground cumin

  • 1 teaspoon sea salt

  • 1 teaspoon black pepper

Preheat the grill.

Thoroughly, cook ground beef in a skillet, drain off the excess fat, and stir in taco seasoning. Stir in beans and heat until warm. Salt to your preference. (Meat should taste a little heavily of taco seasoning to carry over to the vegetables.)

While the beef is cooking, heat oil in a large skillet or pot pan and sautee kale until tender. Add sweet potatoes and sautee until warm. Season with salt and pepper to taste.

Meanwhile, lightly oil your pineapple slices on both sides and grill on high heat for about 3 minutes on each side.

Serve the meat mixture on a bed of the kale and sweet potatoes. Top with pineapple and avocado or guacamole.
